Busy Day Butter Cake

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 1/3 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg, at room temperature
  • 2/3 cup milk
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 1/4 cups powdered sugar
  • 3 tablespoons unsalted butter, melted and cooled slightly
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 350°; spray 9-inch round metal cake pan with nonstick baking spray with flour.
  • 2 in a large bowl, whisk together the flour, sugar, baking powder and salt.
  • 3 add egg, milk, butter, and vanilla to flour mixture.
  • 4 using an electric mixer on med-low speed, beat for 1 minute, until blended.
  • 5 scrape sides down and bottom of bowl with a spatula.
  • 6 beat on medium speed for 1 minute.
  • 7 spread batter evenly in prepared pan.
  • 8 bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs attached.
  • 9 let cool in pan on a wire rack for 10 minutes, then invert cake onto rack to cool completely.
  • 10 icing-in a small bowl, whisk together powdered sugar, butter, milk, and vanilla until blended and smooth; use immediately.
  • 11 spread icing over top of cooled cake.
