Busy Day Butter Cake

Ingredients

- 1 1/3 cups all-purpose flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg, at room temperature
- 2/3 cup milk
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 1/4 cups powdered sugar
- 3 tablespoons unsalted butter, melted and cooled slightly
- 3 tablespoons milk
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 350°; spray 9-inch round metal cake pan with nonstick baking spray with flour.
- 2 in a large bowl, whisk together the flour, sugar, baking powder and salt.
- 3 add egg, milk, butter, and vanilla to flour mixture.
- 4 using an electric mixer on med-low speed, beat for 1 minute, until blended.
- 5 scrape sides down and bottom of bowl with a spatula.
- 6 beat on medium speed for 1 minute.
- 7 spread batter evenly in prepared pan.
- 8 bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs attached.
- 9 let cool in pan on a wire rack for 10 minutes, then invert cake onto rack to cool completely.
- 10 icing-in a small bowl, whisk together powdered sugar, butter, milk, and vanilla until blended and smooth; use immediately.
- 11 spread icing over top of cooled cake.
