Blondies (gooey Variety)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips

Recipe

  • 1 melt sugar and butter together and allow to cool. add eggs, vanilla, baking powder and salt and stir until well blended.
  • 2 pour into a greased 8 inch square pan. bake at 350 f for about half an hour. blondies should still be gooey but hold together.

Blood Orange Cheesecake

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 1/3 cup butter
  • 675 g cream cheese
  • 3/4 cup sugar
  • 1/3 cup sour cream
  • 1 lemon, zest and juice
  • 1 blood orange, zest and juice
  • 5 large eggs, room temperature
  • 1 1/2 cups sour cream
  • 1 blood orange, zest and juice
  • 1/4 cup sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 for the crust, melt butter and add to crumbs.
  • 3 mix well and press into a ten-inch springform pan.
  • 4 bake for about 8-10 minutes until slightly golden.
  • 5 let the crust cool.
  • 6 beat together cream cheese and sugar until smooth.
  • 7 add citrus zest and juice. mix well.
  • 8 add eggs, one at a time, combining well after each addition, but not too vigorously.
  • 9 pour over crumb crust and bake for about 40 minutes. middle will still be slightly jiggly.
  • 10 remove from oven and run a sharp knife around the sides, but do not remove ring.
  • 11 cool 15 minutes on the counter.
  • 12 meanwhile, prepare topping. combine sour cream, citrus zest, citrus juice and sugar.
  • 13 pour over slightly cooled cheesecake and let stand for half an hour at room temperature.
  • 14 chill completely. remove ring and serve.

Blood Orange Olive Oil Brownies

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 4 ounces unsweetened chocolate
  • 1 ounce bittersweet chocolate
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 4 eggs
  • 1 tablespoon vanilla
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup blood orange olive oil (from queen creek olive mill)
  • 1 cup walnuts, coarsely crushed

Recipe

  • 1 preheat oven to 350°f butter a 9x12 pan. on low heat melt chocolate in sauce pan, stirring constantly. set aside to cool. in a separate bowl sift flour, baking powder, and salt. melt butter, add blood orange olive oil, and incorporate one egg at a time. add in vanilla, and then chocolate. fold in dry ingredients and walnuts, don't over mix batter. pour mixture into pan, smoothing off the top. bake for 25-30 minutes until brownies pull away from side of pan.

Amaretto Biscuits

Ingredients

  • 1/2 cup butter
  • 2 tablespoons molasses
  • 2 eggs
  • 1 cup almonds, ground toasted
  • 1/2 teaspoon lemon rind, grated
  • 1 teaspoon almond extract
  • 1/2 cup amaretto liqueur
  • 2 cups pastry flour

Recipe

  • 1 cream together butter and molasses. add eggs, ground almonds, lemon rind and almond extract; mix well.
  • 2 stir in amaretto alternately with flour.
  • 3 drop by teaspoonsful onto unoiled cookie sheets.
  • 4 bake at 170c for 12-15 minutes. cookies will be golden brown when done.

Safs Chocolate Chip Cookies

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 4 ounces baking margarine
  • 2 tablespoons milk
  • 3 ounces soft light brown sugar
  • 2 tablespoons golden syrup
  • 6 ounces self-raising flour
  • 4 ounces plain chocolate chips

Recipe

  • beat the butter till soft using whisk or beater, add the sugar and beat till well mixed. 
  • Now add rest of the ingredients which is the syrup, flour, chocolate chips and milk and mix well until well combined .
  • grease baking tray .
  • Take out a spoonful of mixture in your fingers at a time and make into a 1 inch ball. Or u can use icecream scoop as well.
  • place  cookies on a tray and  bake them  in batches .
  • place in preheated oven to 180c/350°f bake for 8-10 minutes.
  • when finished immediately transfer to a wire cooling rack.

Amaretto Cheesecake

Ingredients

  • Servings: 6
  • 1 cup coconut macaroons
  • 1/2 cup chopped almonds
  • 4 tablespoons butter (room temperature)
  • 24 ounces cream cheese (room temperature)
  • 1 1/3 cups sugar
  • 4 eggs
  • 1/2 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 3 tablespoons amaretto
  • 1/2 cup cream

Recipe

  • 1 in the food processor, put the cookies,the butter and the almonds.
  • 2 "pulse" until blended and press into a bread or loaf pan that has been lined with parchmont paper. the crust will cover the bottom and go either all or part of the way up the sides of the pan. either is fine.
  • 3 (you can substitute vanilla wafers or graham crackers for macaroons.).
  • 4 rinse out the food processor and add the filling ingredients. process until smooth.
  • 5 pour into the crust.
  • 6 set loaf pan into a 13x9 pan of warm water.
  • 7 bake in 325 degree oven for 1.5 hours.
  • 8 let cool and invert onto serving platter.
  • 9 chill and serve.

Basic Pie Crust

Ingredients

  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 8 tablespoons vegetable shortening or 8 tablespoons margarine
  • 4 ounces low-fat cream cheese
  • 4 teaspoons lemon juice
  • 8 -10 tablespoons ice water
  • 1 tablespoon ice water
  • 1 egg

Recipe

  • 1 combine salt and flour.
  • 2 cut in margarine and cream cheese either using two knives or a pastry blender until the mixture looks like coarse oatmeal.
  • 3 combine lemon juice with 2 tbsp of ice water. sprinkle over dough mixture, about 1 tbsp at a time, and mix. the dough should stay rough and chunky, but be able to hold together in a ball. do not add too much water, especially since the dough will become more coherent when left in the fridge. i find that you need about to use all the water in this recipe, but the amount may vary based on your specific environment and ingredients.
  • 4 if making bottom and top crust, seperate dough into two balls.
  • 5 place in a bowl and cover. leave in the fridge for at least 1 hour.
  • 6 roll out on a floured surface. transfer to a greased pie plate, poke holes with a fork in the bottom of the crust and add filling. cover with second crusts and poke holes (you don't need to poke holes in it if you're cutting out shapes or doing a lattice top crust).
  • 7 combine 1 tbsp water with an egg and brush over top of crust.
  • 8 bake at 350f for 30-35 minutes, or until top of crust is browned and filling is cooked through.

Amaretto Bread Pudding

  • 1 (1 lb) challah with poppy seed, broken into 1-inch pieces
  • 1 quart half-and-half
  • 2 tablespoons unsalted butter, room temperature (1/4 stick)
  • 1 1/2 cups sugar
  • 3 eggs, room temperature
  • 2 tablespoons almond extract
  • 3/4 cup golden raisin
  • 3/4 cup sliced almonds, lightly toasted
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter (1 stick)
  • 1 egg, well beaten
  • 1/4 cup amaretto liqueur

Recipe

  • 1 combine bread and half and half in large bowl.
  • 2 cover and let stand 1 hour, stirring occasionally.
  • 3 position rack in center of oven and preheat to 325 degrees.
  • 4 grease a 9x13x2-inch baking dish with 2 tablespoons butter.
  • 5 whisk sugar,eggs and almond extract; stir into bread mixture.

  • 14 stir sugar and butter in top of double boiler set over simmering water until butter melts, sugar disolves and mixture is very hot.
  • 15 remove from over water and whisk in egg.
  • 16 continue whisking until cooled to room temperature; mix in amaretto.
  • 17 (amaretto sauce can be prepared 4 hours ahead.).

Blondies Adapted From A Recipe From Mccormick Spice Company

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup butter, melted
  • 2 cups light brown sugar, firmly packed
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 cup butterscotch chips
  • 1 cup walnuts, chopped

Recipe

  • 1 preheat oven to 350°f line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. spray foil with no stick cooking spray. mix flour, baking powder and salt in medium bowl. set aside.
  • 2 mix butter and brown sugar in large bowl until well blended. add eggs and vanilla; mix well. add flour mixture; mix just until moistened. stir in chocolate chips and walnuts. spread in prepared pan.
  • 3 bake 30 to 35 minutes or until toothpick inserted in center comes out almost clean. cool in pan on wire rack. use foil handles to remove dessert from pan. place on cutting board and cut into bars.

Breakfast Bread Pudding

Ingredients

  • Servings: 8
  • 3 tablespoons softened butter
  • 1 loaf crusty bread, cut into 1 inch think slices
  • 8 ounces ham, cubed
  • 2 cups shredded cheddar cheese
  • 3 large eggs
  • 2 cups milk
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 on one side of each slice of bread spread butter then cut bread into cubes and place on the bottom of a greased 11x7 inch baking dish.
  • 2 top with ham and sprinkle with cheese.
  • 3 in a medium bowl mix eggs, milk, dry mustard, salt and pepper. pour over bread mixture evenly.
  • 4 cover and refrigerate atleast 6 hours or overnight for best results.
  • 5 bake in a preheated 350 degree oven for about 45 to 50 mins until top is brown and a knife comes out clean.

Blondies With Chocolate Ganache

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 9
  • 2 eggs
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1/2 teaspoon orange extract
  • 1/2 teaspoon almond extract
  • 12 ounces chocolate chips
  • 1/2 cup heavy cream

Recipe

  • 1 heat oven to 325 degrees f; coat an 8-by-8-inch baking pan with cooking spray.
  • 2 in large bowl, use an electric mixer to beat the eggs and sugar until the mixture is light and thick.
  • 3 fold in the flour, then the butter and orange and almond extacts.
  • 4 transfer the batter to the prepared pan.
  • 5 bake for 25-30 minutes, or until set and just golden at the edges.
  • 6 let cool for 10 minutes before topping with the ganache.

  • 1 1/4 cups brown sugar
  • 1 egg

Recipe

  • 1 heat oven to 325°f.
  • 2 spray with cooking spray a 8x8 pan.
  • 3 combine flour and salt in a small bowl.

Berries & Cream In Meringue Cups

Ingredients

  • Servings: 6
  • 5 egg whites
  • 1/4 teaspoon cream of tartar
  • 1 cup sugar
  • 1/4 teaspoon cinnamon
  • 3 cups fresh mixed berries
  • 2 tablespoons sugar
  • 1 tablespoon cider vinegar
  • 1 (8 ounce) container whipping cream
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla

Recipe

  • 1 preheat the oven to 250 degrees.
  • 2 line a baking sheet with parchment paper.
  • 3 in a large bowl, beat the egg whites with the cream of tarter until they are foamy.
  • 4 begin to add the granulated sugar, a spoonful at a time.
  • 5 add the cinnamon.
  • 6 continue to beat until the meringue is very glossy and forms stiff peaks.
  • 7 make individual meringue, spread about 1/2-cup of the meringue into a 3-inch circle on the parchment paper.
  • 8 adding a little more of the egg mixture, shape a rim around the edges.
  • 9 continue to make more of the meringue shells, spacing evenly across the baking sheet.
  • 10 bake for about 1-1/2 hours or until firm to the touch.
  • 11 turn off the oven, but leave the meringue shells in the warm oven for another hour.
  • 12 cool completely.
  • 13 berries: mix the berries with vinegar/ sugar and let sit for at least 2 hours.
  • 14 prepare the cream by whipping with the sugar until firm peaks form.
  • 15 fold in pure vanilla, and refrigerate.
  • 16 to assemble, place an individual meringue on each plate, top with some of the berry mixture, and add a dollop of whipped cream.
  • 17 sprinkle w/ cinnamon.

Amaretto Bon Bon Balls

Ingredients

  • Servings: 15
  • 2 cups vanilla wafer crumbs (1 box, crushed, or i have also used 1/2 vanilla wafers and 1/2 chocolate chip cookies)
  • 1 cup almond meal or 1 cup pecan meal (also called "flour", finely ground almonds or pecans)
  • 1 cup confectioners' sugar
  • 3 tablespoons cocoa powder
  • 4 tablespoons light corn syrup
  • 1/2 cup amaretto liqueur (i use the disaronno brand)

Recipe

  • 1 blend all the ingredients together and shape into 30 one-inch balls.
  • 2 if the mixture turns out too wet/dry, balance it out by adding more powdered (icing) sugar to dry it out or more liquor to moisten it up.
  • 3 roll the balls in extra powdered sugar, cocoa powder or chocolate milk powder.
  • 4 store in an airtight container for at least one week before sampling.
  • 5 i have also successfully stored them in the refrigerator and in the freezer.

Berliner Kränze

Ingredients

  • 4 egg yolks, hardboiled (yolks only)
  • 4 eggs, separated
  • 1 cup butter, no substitutions
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 4 cups flour, sifted
  • 1/2 cup cream
  • 1 egg , slightly beaten
  • sugar
  • cinnamon

Recipe

  • 1 rub cooked egg yolks through a sieve and beat well with uncooked egg yolks.
  • 2 cream butter, sugar and salt; add to egg yolks.
  • 3 add flour alternatively with cream.
  • 4 cover and chill.
  • 5 preheat oven to 425f and spray baking sheet lightly with cooking spray.
  • 6 shape with a cookie press or roll out into sheets about 1/8 inch thick and cut with a doughnut cutter.
  • 7 place on cookie sheet.
  • 8 brush top with egg and sprinkle with sugar and cinnamon.
  • 9 bake for 8 to 10 minutes, taking care not to scorch.

Burnt Caramel Cake

  • 1/2 cup sugar, burnt till dark
  • 1/2 cup water
  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 2/3 cup butter, softened
  • 2 cups sugar
  • 3 tablespoons butter
  • 2 tablespoons corn syrup
  • 2 large eggs
  • 1 cup water
  • 1 pinch salt
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar, packed
  • 2/3 cup milk

Recipe

  • 1 this recipe sounds a little confusing.but read it all the way through before attempting --
  • 2 in heavy pot, burn 1/2 cup sugar till dark -- put 1/2 cup boiling water in burnt sugar and let boil to a syrup -- this will take about 7 minutes -- cool, but keep warm --
  • 3 cream sugar and butter, add eggs and beat till creamy --

  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2/3 cup oil
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla

Recipe

  • 1 mix together first four ingredients in a small bowl and set aside.
  • 2 mix together the oil, sugar, eggs, and vanilla, then stir in the dry ingredients.
  • 3 bake in a greased, 9x13-inch pan, for 25-30 minutes at 350°f or until a toothpick comes out clean from the center.

Berries Romanoff With Iced Sour Cream

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 3/4 cup triple sec or 3/4 cup curacao
  • 1/2 cup sugar
  • 1 orange, zest of
  • 5 -6 cups mixed berries
  • 2/3 cup whole milk
  • 1/3 cup sour cream
  • 1/4 cup sugar
  • 2 teaspoons vodka

Recipe

  • 1 in a medium size mixing bowl, whisk together the triple sec or curacao, sugar and orange zest until the sugar is dissolved.
  • 2 stir in berries and marinate at room temperature for at least 1 hour, stirring gently once or twice.
  • 3 make the iced sour cream:.
  • 4 mix together the whole milk, sour cream, sugar, and vodka in a blender. freeze in an ice cream maker according to the directions.
  • 5 spoon berries into glasses, add a scoop of the iced sour cream, then pour the triple sec and berry juice over each dessert.

Blondie Drops

Ingredients

  • 1/3 cup butterscotch chips
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fat-free buttermilk
  • 2 cups light brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 egg whites

Recipe

  • 1 line two baking sheets with parchment paper and preheat oven to 350.
  • 2 sift flour, baking powder, and salt in medium bowl and set aside.
  • 3 in large bowl, mix together buttermilk, brown sugar, and vanilla. add eggs and mix until blended.
  • 4 on low speed, add the flour mixture, mixing until combined.
  • 5 melt the butterscotch chips and set aside.
  • 6 drop dough teaspoons about 3 inches apart onto prepared baking sheets. drizzle about 1/4 teaspoon of melted butterscotch over the top of each cookie and gently swirl with a toothpick or small sharp knife to marbelize it.

Blood Orange Sabayon

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 3 blood oranges
  • 2 egg yolks
  • 2 tablespoons sugar

Recipe

  • 1 finely zest 1 orange& place in large bowl.
  • 2 remove the skin from all the oranges, cut them into segments (keeping the juice- you should have about 1/4 cup).
  • 3 divide the segments between 2 serving dishes& chill.
  • 4 add the reserved juice into the zest.
  • 5 add yolks& sugar and whisk together.
  • 6 bring a large pot of water to a simmer.
  • 7 place the bowl with the egg yolks on top& using an electric mixer, whisk until the mixture thickens& doubles in volume (about 5- 7 minutes).
  • 8 remove the orange segments from the fridge; pour hot sauce over top& serve immediately.

Amaretto Cake

Ingredients

  • Servings: 7
  • 1 (18 ounce) package chocolate cake mix
  • 3 eggs (or as called for by your cake mix)
  • 1/3 cup oil (or as called for by your cake mix)
  • 1 1/3 cups water (or as called for by your cake mix)
  • 1 cup amaretto (or as preferred)
  • 8 ounces cool whip
  • english toffee bits

Recipe

  • 1 bake cake as directed on package.
  • 2 in a deep glass bowl, break up 1/3 of the cake and put in bottom of bowl.
  • 3 pour 1/3 cup (or less) of amaretto on top of cake.
  • 4 spread 1/3 of the container of cool whip on top of cake mix and amaretto.
  • 5 sprinkle heath bits on cool whip.
  • 6 repeat layers ending with heath bits on top.
  • 7 this makes a pretty dessert when when placed in a glass bowl as the layers look real nice!

  • 1 box chocolate pudding
  • 2 ounces semisweet chocolate
  • 1 1/2 cups milk, plus
  • 2 tablespoons milk
  • 6 tablespoons amaretto
  • whipped cream

Recipe

  • 1 cook pudding mix, chocolate, milk, and amaretto until the mixture thickens.
  • 2 pour into pudding cups and chill until set.
  • 3 top with whipped cream.
  • 4 as an alternative, use kahlua instead of amaretto.

Amaretto Cheesecake With Apricot Glaze

Ingredients

  • 1/2 cup almonds, chopped toasted, unblanched
  • 2 tablespoons sugar
  • 1/4 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 tablespoons flour
  • 4 eggs
  • 1 cup sour cream

  • 2 press onto bottom of a 9-inch springform pan; set aside.
  • 3 filling: combine cream cheese, sugar, and flour, mixing until well blended.
  • 4 add eggs, one at a time, mixing just until combined.
  • 5 blend in sour cream and liqueur; pour over crust.
  • 6 bake in 450 degree f oven 10 minutes.
  • 7 reduce oven temperature to 250 degrees f; continue baking for 1 hour.
  • 8 run knife around rim of pan; cool on wire rack.

  • 10 glaze: to glaze cake, combine jam and liqueur in a saucepan; heat until warm and smooth.

  • 1 for the crust: place almonds on a cookie sheet and bake at 350 degrees f. for 8-10 minutes. remove from oven. let cool. grind in food processor, and set aside.
  • 2 in a mixing bowl put ground almonds, amaretto, melted butter, and graham cracker crumbs, and mix with an electric mixer until combined evenly. press the mixture onto the bottom and sides of a 9-inch springform pan and refrigerate.
  • 3 for the cheesecake filling: preheat the oven to 350 degrees f. place almond paste in a food processor with flour. pulse until it is fluffy and evenly ground. combine the almond paste mixture, amaretto, and sugar in a mixing bowl; beat with electric mixer until smooth. beat in one-third of the cream cheese at a time, mixing well after each addition. beat in the eggs one at a time, then pour the mixture into the prepared springform pan. bake in the preheated oven for 50 minutes.
  • 4 let cake cool on counter for several hours. refrigerate, uncovered, over night. cover in the morning. it tastes better if it has had a chance to sit for 24 hours. when serving, let the flavors "bloom" by allowing the cake to warm to room temperature before serving.

  • 3 place on ungreased cookie sheet and flatten into circles using a glass dipped in sugar so that the glass won't stick when you flatten the cookies.

  • 1 preheat oven to 350 degrees fahrenheit. grease 13"x9" metal baking pan. line pan with foil; grease foil.
  • 2 in a heavy 3-quart saucepan, melt margarine or butter over low heat. remove saucepan from heat. with wooden spoon, stir in brown sugar and vanilla, then stir in eggs until well blended. in a small bowl, combine flour, baking powder, and salt; stir into sugar mixture just until blended. stir in chopped pecans.

Recipe

  • 1 process the flour and salt in a food processor for 20 seconds.
  • 2 distribute the butter evenly over the flour and process until the mixture resembles coarse meal, 15-20 seconds.
  • 3 with the food processor running, pour the ice water in a steady stream through the feed tube and process just until the dough comes together.
  • 4 knead the dough for several turns on a lightly floured surface to bring it together.
  • 5 shape the dough into a thick disks (or 2 for a double crust), wrap in plastic and refrigerate for at least an hour.
  • 6 to roll out the dough, place the chilled dough between 2 pieces of waxed paper (helps tremendously in rolling out!) and roll it out to a circle 2 inches bigger than the size of the pie pan.
  • 7 fit the dough into a 9-inch (greased) pie plate and trim the edges.
  • 8 keep the crust in the refrigerator until ready to fill.
  • 9 if prebaking the crust, refrigerate it for at least 30 minutes or stick in the freezer before baking (i always freeze it).

Baked Ricotta, Honey & Strawberries

  • 2 tablespoons honey
  • powdered sugar, for dusting

  • 1 preheat the oven to 300°f/150°c line the bottom of four 4-inch-/10-cm-diameter springform cake pans with parchment paper. using a metal spoon, push the ricotta through a fine sieve and into a large bowl.
  • 2 whisk the sugar, honey, egg yolks, lemon juice and zest into the ricotta to blend well. using an electric mixer, beat the egg whites in another large bowl until firm peaks form. gently fold the egg whites into the ricotta mixture.
  • 3 spoon the ricotta mixture into the prepared cake pans. place the pans on the center rack in the oven. place a baking sheet on the bottom shelf in the oven to catch any drippings from the cakes. bake for about 30 minutes or until the cakes puff and are just set in the center. remove the cakes from the oven and cool about 20 minutes. the cakes will sink as they cool.
  • 4 toss the strawberries and honey in a bowl to coat. let stand for 15 minutes or until juices form.
  • 5 unlock and remove the pan sides from the cakes. remove the cakes from the pan bottoms and transfer to individual serving plates. spoon the strawberries atop the cakes. drizzle some of the strawberry juices around the cakes. dust with powdered sugar and serve.

Baked Ricotta Cakes With Berry Sauce

  • 2 tablespoons honey

  • 1 pre heat the oven to 180°c.
  • 2 place the ricotta cheese in a bowl and break it up with a wooden spoon.
  • 3 add the beaten egg whites, honey and vanilla. mix thoroughly until smooth and well combined.
  • 4 lightly grease four small ramekins. spoon the ricotta mixture into the prepared ramekins and level the tops. bake for 20 minutes, or until ricotta cakes are risen and golden.
  • 5 meanwhile make the berry sauce. reserve about ¼ of the berries for decoration. place the rest in a pan, with a little water. heat gently until softened. leave to cool. process in a blender or food processor until smooth.

Amaretto Chocolate Mousse

  • 1 combine watr and 2 tb sugar in a small heavy saucepan; bring to a boil, and stir until sugar dissolves. remove from heat, add chocolate, and cover. let mixture stand 5 mintues or until chocolate melts. cool.
  • 2 beat egg whites (at room temperature) until foamy. add cream of tartar and 2 tb sugar, 1 tb at a time, beating until stiff peaks form. set aside.
  • 3 add egg yolks to chocolate mixture; beat until smooth. stir in amaretto. fold abotu 1/4 of the egg mixture into chocolate mixture; fold chocolate mixture into remaining egg mixture. spoon mousse into 2 dessert dishes and chill. to serve, garnish each serving with an almond slice, if desired.

Amaretti With Chocolate Mascarpone

  • 1 spread out the chopped amaretti cookies on wax paper.
  • 2 sprinkle the rum over cookies to evenly coat.
  • 3 set aside.
  • 4 in a large bowl, beat egg yolks and sugar until light and fluffy.
  • 5 pour into small saucepan and place in larger saucepan half filled with boiling water.
  • 6 (or double boiler if you have one).
  • 7 whisk mixture, adding almond extract, cocoa and mascarpone.
  • 8 whisk until ribbons form when you pull up the whisk.
  • 9 beat until smooth.
  • 10 slowly add wine and whisk until mixture thickens.
  • 11 remove from heat and chill at least 30 minutes.
  • 12 when ready, put a tablespoon of cookie mixture on the bottom of a serving bowl.
  • 13 spoon in mascarpone mixture.
  • 14 add another tablespoon of cookie mixture.
  • 15 top with a dollop of whipped cream and sliced almonds.
  • 16 serve.

Berries With Lemon Custard Sauce

  • 6 ounces fat-free lemon yogurt
  • 2 egg yolks
  • 5 tablespoons sugar
  • 1 teaspoon cornstarch
  • 1 pinch salt
  • 2 tablespoons grated lemon zest
  • 1/3 cup fresh lemon juice
  • 1 cup 1% low-fat milk
  • 1/2 teaspoon vanilla
  • 2 cups fresh mixed berries or 2 cups frozen mixed berries
  • 4 sprigs fresh mint

Recipe

  • 1 line a sieve with a coffee filter, spoon in the yogurt and let drain for about an hour in the refrigerator.
  • 2 in a medium saucepan whisk together the egg yolks and sugar.
  • 3 add cornstarch, salt, 1 tbsp lemon zest and lemon juice and whisk together.
  • 4 whisk in the milk over medium heat.
  • 5 switch to a wooden spoon and cook, stirring constantly, until custard is thickened to the consistency of a thin pudding – about 5-8 minutes.
  • 6 bring it up to the boiling point but do not let it boil.
  • 7 remove when it is thickened and immediately pour into a bowl.
  • 8 stir in vanilla, let mixture cool for 15 minutes.
  • 9 whisk in the yogurt cheese from first step and chill for at least 1/2 hour.
  • 10 to serve, top berries with chilled custard sauce and garnish with the fresh mint and remaining lemon zest.

Berries & Cream Trifle

  • 1 family sized sara lee poundcake, cubed (or 1 1/2 of the cakes from recipe 54265)
  • 9 ounces cool whip
  • 1 quart strawberry, clean, hulled, sliced
  • 1 -2 cup raspberries
  • 1 -2 cup blueberries
  • 3 berries (to garnish)

Recipe

  • 1 in a large bowl, combine sweetened condensed milk and cold water. mix well.
  • 2 add pudding mix and beat well.
  • 3 chill 5 or 10 minutes.
  • 4 fold in cool whip.
  • 5 to layer, put 1/2 the pound cake in the bottom of a glass bowl.
  • 6 top with half of your berries followed by half of the cream. (remember to leave a few of the best looking berries for garnish.).
  • 7 repeat layering, ending with the cream.
  • 8 garnish with berries.
  • 9 my preference is to refrigerate for at least 2 hours before serving.
  • 10 i have also changed the layering to end with the berries, also a pretty look although much more casual.
  • 11 for lighter fare angel food cake can be used, however it is best to layer angel food immediately before serving. (i chill the cake so everything is cold.).

Recipe

  • 1 crush enough graham crackers or very dry macaroons to make a cup. (macaroon crumbs sometimes can be found in pastry shops.) add butter and liqueur, and mix well. press into bottom of 10-inch buttered springform pan. preheat oven to 350 degrees.
  • 2 mix cream cheese and heavy cream at low speed in mixer until smooth. mix sugars and cornstarch together, and add to cream cheese. mix slowly just until mixture is smooth. add eggs and yolks while continuing to mix slowly. add salt and liqueur, and mix until smooth. pour over crust in prepared pan.
  • 3 bake at 350 degrees for 35 to 40 minutes or until a circle the size of a silver dollar is still soft. turn oven off. leave in oven until cool (about 1 hour). if desired, top cake with apricot preserves and garnish with toasted almonds. chill well before serving.

  • 1 preheat oven to 350 degrees. butter a six-cup cakepan or casserole dish with a little of the melted butter.
  • 2 mix apples, brown sugar, honey, lemon juice, rum and raisins together and spread in a pan.
  • 3 sift flours, baking powder and salt and set aside.
  • 4 beat eggs until thick. gradually beat in all but one tablespoon of the sugar. stir in the dry ingredients, mixing only until they are combined. spread batter over apples in the baking dish.
  • 5 drizzle the remaining melted butter over the batter and sprinkle with reserved tablespoon of sugar.

  • 5 remove star anise and cinnamon from saucepan.
  • 6 whisk together sugar and eggs.

  • 8 place in baking tray filled with enough hot water to come halfway up the sides of the bowls or glasses.
  • 9 bake for 25 minutes or till creams are just set, then remove from the baking dish and refrigerate for 2 hours, or till cool.
  • 10 top each cream with 2 teaspoons of honey.
  • 11 place under a hot grill until the honey is a deep golden colour.
  • 12 leave for 3 minutes before serving.

  • 2 combine sugar and water in a large heavy saucepan. cook over medium heat, stirring occasionally, until sugar is dissolved, about 5 minutes. increase heat to high and bring to a boil, washing down the sides of the pan with a pastry brush dipped in cool water to dissolve any sugar crystals. boil, without stirring, until caramel turns dark amber, about 10 minutes(keep a good eye on it).
  • 3 immediately remove the pan from heat; let caramel cool 1 minute.

  • 2 peel & remove the pith from all oranges; remove the seeds & cut the oranges into generous 1/4" thick slices. arrange them in layers in a shallow serving bowl.

Burnt-sugar Lollipops -- Weight Watchers

  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon cream of tartar
  • cinnamon stick (24 4-inch long)

  • 1 line a large baking sheet with a silicon baking mat or parchment paper.
  • 2 chill in the refrigerator for 30 minutes, so that when the hot sugar hits the cool sheet it will firm up faster, and not spread out too far.
  • 3 stir the sugar, corn syrup, water and cream of tartar in a medium saucepan, over medium heat, until the sugar dissolves.
  • 4 raise the heat to med-high, and bring to a simmer, brushing down the pan's inside walls occasionally with a wet pastry brush (wet with a little bit of water) to remove any sugar crystals. simmer 5 minutes.
  • 5 bring the mixture to a full boil, and cook undisturbed until very light amber, about 8 minutes.
  • 6 remove from the heat, and pour into a large pyrex measuring cup with a pouring spout or into a second saucepan, preferably one with a pouring lip. set aside just until the mixture stops boiling and thickens somewhat (it will continue to darken), about 2 minutes.
  • 7 remove the prepared baking sheet from the refrigerator.
  • 8 pour 24 (1 1/2") circles onto the prepared baking sheet, spacing the circles about 1 inch apart.
  • 9 press the cinnamon sticks into each of these circles, forming handles for the lollipops.
  • 10 use a spoon to drizzle the remaining, very-hot sugar syrup over the top of each cinnamon stick that's stuck into the sugar, thereby sandwiching the stick in hardened sugar.
