Amaretto Cheesecake With Apricot Glaze

Ingredients
- Servings: 10
- 1 cup graham wafer crumbs 
- 1/2 cup almonds, chopped toasted, unblanched 
- 2 tablespoons sugar 
- 1/4 cup butter, melted 
- 4 (8 ounce) packages cream cheese, softened 
- 1 cup sugar 
- 3 tablespoons flour 
- 4 eggs 
- 1 cup sour cream 
- 1/4 cup amaretto di saronno liqueur 
- 1/2 cup apricot jam 
- 1 tablespoon amaretto di saronno liqueur 
Recipe
- 1 crust: combine ingredients. 
- 2 press onto bottom of a 9-inch springform pan; set aside. 
- 3 filling: combine cream cheese, sugar, and flour, mixing until well blended. 
- 4 add eggs, one at a time, mixing just until combined. 
- 5 blend in sour cream and liqueur; pour over crust. 
- 6 bake in 450 degree f oven 10 minutes. 
- 7 reduce oven temperature to 250 degrees f; continue baking for 1 hour. 
- 8 run knife around rim of pan; cool on wire rack. 
- 9 chill. 
- 10 glaze: to glaze cake, combine jam and liqueur in a saucepan; heat until warm and smooth. 
- 11 strain mixture and pour over cheesecake before removing sides of pan.
