Bengal Fruit Loaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 3 cups sultanas
  • 2 cups sugar
  • 2 cups water
  • 125 g butter
  • 1 3/4 cups plain flour
  • 1 teaspoon mixed spice
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cloves
  • 1/2-1 teaspoon curry powder

Recipe

  • 1 place sultanas, sugar, water and butter in a saucepan.
  • 2 bring to the boil.
  • 3 simmer 5 minutes.
  • 4 cool totally.
  • 5 sift remaining ingredients into a bowl.
  • 6 make a well in the centre.
  • 7 pour in fruit mixture.
  • 8 mix well and spoon into 2 greased loaf tins 10 x 20 cms.
  • 9 bake moderate oven 180 c for i hour or till cooked when tested.
  • 10 cool 5 minutes in tin then turn onto wire rack.
  • 11 whentotally cool, serve sliced and buttered.
