Bengal Fruit Loaf

Ingredients
- 3 cups sultanas
- 2 cups sugar
- 2 cups water
- 125 g butter
- 1 3/4 cups plain flour
- 1 teaspoon mixed spice
- 1 teaspoon bicarbonate of soda
- 1 teaspoon ground cloves
- 1/2-1 teaspoon curry powder
Recipe
- 1 place sultanas, sugar, water and butter in a saucepan.
- 2 bring to the boil.
- 3 simmer 5 minutes.
- 4 cool totally.
- 5 sift remaining ingredients into a bowl.
- 6 make a well in the centre.
- 7 pour in fruit mixture.
- 8 mix well and spoon into 2 greased loaf tins 10 x 20 cms.
- 9 bake moderate oven 180 c for i hour or till cooked when tested.
- 10 cool 5 minutes in tin then turn onto wire rack.
- 11 whentotally cool, serve sliced and buttered.
