Buttermilk Pie

Ingredients

- 1/3 cup butter (no substitutes)
- 1 cup sugar
- 3 egg yolks, beaten
- 3 tablespoons flour
- 1/4 teaspoon salt
- 1 teaspoon lemon juice
- 1/2 teaspoon grated fresh lemon rind
- 1 1/2 cups buttermilk
- 3 egg whites, stiffly beaten
- 1 9" unbaked pie shell
Recipe
- 1 cream butter and sugar together.
- 2 add egg yolks and beat well.
- 3 add flour, salt, lemon juice and rind; mix thoroughly.
- 4 add buttermilk and mix well.
- 5 fold in beaten egg whites.
- 6 pour filling into crust and bake for 10 minutes at 450 degrees.
- 7 lower heat to 350 degrees and continue baking 40 minutes.
- 8 may need to cover crust edges with foil it starts to get too brown.
