Caramel Mousse

Ingredients

- 1 tablespoon unflavored gelatin
- 3/4 cup water
- 1/2 cup sugar
- 5 eggs, separated
- 2 tablespoons sugar
- 1 1/4 cups whipping cream, whipped
Recipe
- 1 combine gelatin and 1/4 cup water in top of a double boiler; place over simmering water.
- 2 heat, stirring, until gelatin dissolves.
- 3 cool.
- 4 combine sugar and 2 tbsp water in a saucepan; bring to a boil.
- 5 boil until syrup is a golden caramel.
- 6 remove from heat and cool for 5 minutes.
- 7 stir in remaining water until mixture is smooth; cool for 5 minutes.
- 8 stir in gelatin mixture.
- 9 combine egg yolks and sugar; beat until thick and creamy.
- 10 whisk in caramel mixture until fluffy.
- 11 beat egg whites until soft peaks form.
- 12 fold egg mixture and whipped cream into caramel mixture.
- 13 spoon into serving glasses.
- 14 chill until ready to serve.
- 15 garnish with whipped cream.
