Caramel Custard (flan)

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 5
  • 1/2 cup brown sugar
  • 3 eggs
  • 1/4 cup sugar
  • 1/8 teaspoon salt
  • 2 cups milk, scalded
  • 1/2 teaspoon vanilla

Recipe

  • 1 spread brown sugar over bottom of baking dish or mold.
  • 2 beat eggs until blended.
  • 3 add sugar and salt.
  • 4 slowly stir in scalded milk.
  • 5 temper first so you don't have scrambled eggs.
  • 6 add vanilla and blend.
  • 7 spoon over brown sugar.
  • 8 set in baking dish in a pan of hot water so that water comes up one inch to the top of the baking dish.
  • 9 bake 40 minutes at 350 degrees or until a knife inserted comes out clean.
  • 10 run knife around edge and invert.
