Caramel Custard (flan)

Ingredients

- 1/2 cup brown sugar
- 3 eggs
- 1/4 cup sugar
- 1/8 teaspoon salt
- 2 cups milk, scalded
- 1/2 teaspoon vanilla
Recipe
- 1 spread brown sugar over bottom of baking dish or mold.
- 2 beat eggs until blended.
- 3 add sugar and salt.
- 4 slowly stir in scalded milk.
- 5 temper first so you don't have scrambled eggs.
- 6 add vanilla and blend.
- 7 spoon over brown sugar.
- 8 set in baking dish in a pan of hot water so that water comes up one inch to the top of the baking dish.
- 9 bake 40 minutes at 350 degrees or until a knife inserted comes out clean.
- 10 run knife around edge and invert.
