Banana Pancakes With Warm Coconut Honey

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup plain flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 egg
  • 1 cup coconut cream
  • 2 tablespoons butter, melted
  • 2 ripe bananas, mashed
  • 1/4 cup honey
  • 1/4 cup coconut cream

Recipe

  • 1 mix the flour, sugar, baking powder & salt in a bowl.
  • 2 in a separate bowl combine the vanilla, egg, coconut cream, melted butter and bananas and whisk thouroughly to blend.
  • 3 gently whisk the flour mixture into the liquid until just incorporated.allow the batter to rest for 5 minutes.
  • 4 heat a frypan & add a little butter -- ladle a heaped portion of batter into the pan and cook for 1-2 mins until underside is golden brown, flip and cook for 1-2 mins more until cooked through -- continue with remaining batter.
  • 5 for coconut honey:.
  • 6 heat a small saucepan & add honey, cook for one minute or until nice & runny, add the coconut cream and cook for a further 2 mins, stirring to combine.
  • 7 to serve -- add a dob of butter to each panacake followed by coconut honey.
