- 75 g caster sugar
- 200 ml double cream
- 1/2 lemon, zest of
Recipe
- 1 place sugar in a small heavy pan and add 3 tbsp water. heat gently until the sugar dissolves.
- 2 bring to boil and cook until the sugar becomes a deep golden colour.
- 3 remove from heat and carefully add the cream and lemon zest.
- 4 stir over a gentle heat until smooth and leave to cool.
