Bacon-butterscotch Chip Cookies

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter (room temp)
  • 3/4 cup brown sugar (packed)
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips
  • 1/3 cup chopped cooked bacon

Recipe

  • 1 preheat oven to 350ºf. line a cookie sheet with silpat (or other silicone mat), parchment paper will also work.
  • 2 whisk together flour, baking soda and baking powder & salt, set aside.
  • 3 using an electric mixer, beat the butter, brown & sugar till smooth. add 1 egg, beat till blended, then add the last egg, and vanilla extract.
  • 4 slowly add the flour mixture, a little at a time, till it's mixed well. stir in bacon and butterscotch chips.
  • 5 drop by tablespoons onto cookie sheets.
  • 6 bake in oven for about 10 - 12 minutes, or until the edges turn golden brown. remove from oven, let cool for a few minutes on the sheet then move to a wire rack.
