Alton Brown's Ice Cream

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • 9 ounces vanilla sugar
  • 8 egg yolks
  • 3 cups half-and-half
  • 2 tablespoons vanilla extract
  • 1 cup heavy cream

Recipe

  • 1 in a medium sauce pan combine the half and half and heavy cream, stir over medium heat until just boiling.
  • 2 blend the egg yokes and slowly add the sugar until all mixed.
  • 3 temper in the heated milk mixture.
  • 4 return to saucepan and over low heat bring mixture to 170 degrees.
  • 5 move to chilled metal bowl.
  • 6 after slight cooling, add vanilla extract.
  • 7 chill until mixture reaches 40 degrees (usually overnight).
  • 8 add mixture to machine and add any additional flavorings.
  • 9 enjoy.
