Almond Toffee Cookies

Ingredients
- 1 cup butter (no substitutes)
- 1 cup sugar
- 1 cup icing sugar
- 1 cup vegetable oil
- 2 eggs
- 1 teaspoon almond extract
- 1 cup whole wheat flour
- 3 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 1 (6 ounce) package toffee pieces
- 2 cups chopped almonds
- additional icing sugar, for rolling
Recipe
- 1 set oven to 350 degrees.
- 2 in a mixing bowl, cream butter and 1 cup sugar and 1 cup icing sugar.
- 3 add the oil, eggs and extract; mix well.
- 4 in another bowl, combine the whole wheat flour and flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture.
- 5 stir in almonds and toffee bits.
- 6 shape into 1-inch balls.
- 7 roll in icing sugar.
- 8 place on ungreased baking sheets, and flatten with a fork.
- 9 bake for 12-14 minutes, or until lightly browned.
- 10 sprinkle with additional icing sugar while warm.
