Butter Mallow Bars

Ingredients

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 25 marshmallows, regular sized, cut in half
  • 1 1/2 cups brown sugar
  • 1/4 cup butter
  • 1/3 cup cream
  • 1/8 teaspoon salt (pinch)
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 350*.
  • 2 sift dry ingredients together - flour, baking powder, and salt.
  • 3 cream butter and sugar, then mix in egg and vanilla extract.
  • 4 stir in the dry ingredients, mixing well.
  • 5 spread in a 8" greased pan. bake @ 350* for 20-25 minutes. remove from oven.
  • 6 cover with marshmallows, cut side down, pressing in slightly. return to oven to melt slightly, 2-4 minutes.
  • 7 topping: combine all ingredients except the vanilla, and bring to a boil.
  • 8 cook until soft ball stage, 238*f (or when a small amount of mixture dropped from a spoon into cold water forms a "soft ball").
  • 9 remove from heat and cool 5 minutes. do not stir!
  • 10 after the 5 minutes, beat in the vanilla until mixture is of spreading consistency. spread over marshmallow layer & cut into squares.
