Butter Mallow Bars

Ingredients
- 3/4 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup butter
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 25 marshmallows, regular sized, cut in half
- 1 1/2 cups brown sugar
- 1/4 cup butter
- 1/3 cup cream
- 1/8 teaspoon salt (pinch)
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 350*.
- 2 sift dry ingredients together - flour, baking powder, and salt.
- 3 cream butter and sugar, then mix in egg and vanilla extract.
- 4 stir in the dry ingredients, mixing well.
- 5 spread in a 8" greased pan. bake @ 350* for 20-25 minutes. remove from oven.
- 6 cover with marshmallows, cut side down, pressing in slightly. return to oven to melt slightly, 2-4 minutes.
- 7 topping: combine all ingredients except the vanilla, and bring to a boil.
- 8 cook until soft ball stage, 238*f (or when a small amount of mixture dropped from a spoon into cold water forms a "soft ball").
- 9 remove from heat and cool 5 minutes. do not stir!
- 10 after the 5 minutes, beat in the vanilla until mixture is of spreading consistency. spread over marshmallow layer & cut into squares.
