Applesauce Cake (ob'l Dunkes Kucha)

Ingredients

  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1 cup light brown sugar, firmly packed
  • 1 cup unsweetened applesauce or 3 medium apples
  • 1 cup raisins

Recipe

  • 1 ****to make applesauce****.
  • 2 wash, quarter, core and pare 3 medium-sized apples.
  • 3 put prepared apples into a sauce pan with 3 tablespoons of water.
  • 4 cover and simmer for 10-15 minutes or until apples are tender, stirring occasionally.
  • 5 press cooked apples through a sieve or food mill.
  • 6 cool applesauce before using in cake.

  • 9 grease the bottom only of an 8x8x2-inch square baking pan.

  • 13 alternately add the dry ingredients (in fourths) and applesauce (in thirds) to creamed mixture, mixing until blended after each addition.
  • 14 mix in the raisins.
  • 15 turn batter into prepared pan (batter will be very thick).
  • 16 bake at 350°f for 30 to 40 minutes, or until cake tester or wooden toothpick comes out clean when inserted in center.
  • 17 cool in pan on rack.
