Carole's Rhubarb Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 20
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups rhubarb, raw, diced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 grease and flour a 13x9x2 pan and set aside.
  • 3 in medium bowl combine flour, salt, and baking soda. set aside.
  • 4 in small bowl combine 1/2 cup granulated sugar and cinnamon. set aside for topping.
  • 5 in large mixing bowl, cream together butter, brown sugar and 1/2 cup granulated sugar.
  • 6 beat in egg and vanilla, then mix in buttermilk.
  • 7 gradually add flour mixture, mixing well, and then fold in the rhubarb.
  • 8 pour into prepared 13x9x2 pan and sprinkle the cinnamon/sugar mixture over the top.
  • 9 bake for 30 to 35 minutes or until toothpick tested done. remove from oven and let cool completely before covering to store.
