Carole's Rhubarb Cake

Ingredients

- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups rhubarb, raw, diced
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Recipe
- 1 preheat oven to 375 degrees.
- 2 grease and flour a 13x9x2 pan and set aside.
- 3 in medium bowl combine flour, salt, and baking soda. set aside.
- 4 in small bowl combine 1/2 cup granulated sugar and cinnamon. set aside for topping.
- 5 in large mixing bowl, cream together butter, brown sugar and 1/2 cup granulated sugar.
- 6 beat in egg and vanilla, then mix in buttermilk.
- 7 gradually add flour mixture, mixing well, and then fold in the rhubarb.
- 8 pour into prepared 13x9x2 pan and sprinkle the cinnamon/sugar mixture over the top.
- 9 bake for 30 to 35 minutes or until toothpick tested done. remove from oven and let cool completely before covering to store.
