Buttery Apple Cinnamon Cake

Ingredients

- 1 3/4 cups sugar
- 1/2 cup butter, softened (no subs!)
- 1 tablespoon vanilla
- 1 (8 ounce) package cream cheese, room temperature
- 2 large eggs (room temperature)
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup sugar (use or light brown)
- 3 teaspoons cinnamon
- 3 large apples, peeled and chopped
Recipe
- 1 set oven to 350 degrees (set oven rack to second-lowest position).
- 2 prepare a 9-inch springform pan.
- 3 in a bowl using an electric mixer beat the butter with 1-3/4 cups sugar, softened cream cheese and vanilla until smooth and well blended (about 3-4 minutes).
- 4 add in eggs; mix well until completely blended.
- 5 in a small bowl combine the flour, baking powder and salt; add to the creamed mixture just until blended.
- 6 in a small bowl combine 1/3 cup or light brown sugar with 3 teaspoons cinnamon.
- 7 in another bowl mix together the chopped apples with 3 tablespoons of the cinnamon mixture, then stir the apple mixture into the batter.
- 8 transfer the batter into prepared baking dish or springform baking pan.
- 9 sprinkle the top of the batter with remaining cinnamon/sugar mixture.
- 10 bake for about 50-60 minutes (for springform pan) or until the cake test done.
- 11 cool cake completely in the pan, then remove to a wire rack.
