Applesauce And Honey Cake With Raisin Glaze

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup honey
  • 1 cup applesauce
  • 2 cups self-rising flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup raisins
  • 1/2 cup walnuts, chopped
  • 1 cup chopped raisins
  • 1 1/2 cups water
  • 1/2 cup honey
  • 1 1/2 tablespoons lemon juice

Recipe

  • 1 preheat the oven to 350 degrees. spray an 8x8 pan.
  • 2 cream the butter in a large bowl; while still beating, stream in the honey. mix in the applesauce.
  • 3 combine the dry ingredients and mix into the applesauce mixture and beat 30 seconds.
  • 4 fold in the nuts and raisins.
  • 5 bake 40 minutes or until the cake springs back in the center and a toothpick comes out clean. while the cake is baking, prepare the raisin glaze.
  • 6 in a saucepan, combine the water and chopped raisins. bring to a boil; add honey, reduce heat, and simmer 15 minutes. remove from heat and add lemon juice. while cake is still warm, pierce cake with a fork (the end of a wooden spoon is too large). spoon the glaze over the cake.
