Ingredients

- 1 medium ripe pineapple
- 1 cup water
- 2 cups sugar
- 1/3 cup light corn syrup
Recipe
- 1 peel pineapple and slice into bite sized chunks.
- 2 in a heavy saucepan bring sugar, water and corn syrup to a boil.
- 3 add pineapple chunks.
- 4 cook over low heat until fruit becomes transparent.
- 5 drain pineapple on rack and allow to dry.
- 6 store in airtight container.
