Candied Pineapple Chunks

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1 medium ripe pineapple
  • 1 cup water
  • 2 cups sugar
  • 1/3 cup light corn syrup

Recipe

  • 1 peel pineapple and slice into bite sized chunks.
  • 2 in a heavy saucepan bring sugar, water and corn syrup to a boil.
  • 3 add pineapple chunks.
  • 4 cook over low heat until fruit becomes transparent.
  • 5 drain pineapple on rack and allow to dry.
  • 6 store in airtight container.
