Baklava-inspired Ice-cream

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 500 ml cream
  • 1 vanilla bean
  • 4 egg yolks
  • 100 ml honey
  • 1 cup toasted walnuts, chopped
  • 1 tablespoon cinnamon
  • 1 tablespoon sugar

Recipe

  • 1 method.
  • 2 split the vanilla bean and scrape the seeds into the cream.
  • 3 add the scraped bean to the cream and heat until it just begins to simmer and then remove from the heat.
  • 4 in a bowl that fits into a medium-sized saucepan, whisk the egg yolks until they are light and fluffy.
  • 5 pour the hot cream over them while continuing to whisk.
  • 6 add the honey and place the bowl over a saucepan of just simmering water until the mixture thickens enough to coat the back of a spoon.
  • 7 churn in an ice cream machine until firm then place in the freezer.*.
  • 8 mix the walnuts, cinnamon and sugar and spread on to a plate.
  • 9 to serve, roll scoops of the ice cream in the nuts until they are well coated.
  • 10 drizzle with extra honey to taste.
