Apple Clafouti

Ingredients

  • Servings: 6
  • 2 large apples, peeled, cored, and cut into 1-inch pieces (suggested gala or pink lady)
  • 2 tablespoons unsalted butter, softened and cut into small pieces
  • 4 tablespoons sugar, plus
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • salt (a pinch)
  • 1/2 teaspoon ground cinnamon
  • 4 large eggs
  • 1 3/4 cups half-and-half
  • 2 teaspoons vanilla extract
  • powdered sugar, for dusting

Recipe

  • 1 preheat oven to 425°; generously coat a 13 x 9 inch baking dish with butter.
  • 2 place on a baking sheet.
  • 3 sprinkle apples on the bottom of the dish and then mix with the butter and 2 tablespoons sugar until nicely coated.
  • 4 bake for 20 minutes, stirring occasionally so that the apples cook evenly; remove from the oven.
  • 5 meanwhile, combine the flour, baking powder, salt, and cinnamon on a large sheet of waxed paper.
  • 6 in a large bowl or in a blender, beat the eggs with the 3/4 cup sugar for 1 minute, or until blended.
  • 7 beat in the dry ingredients alternately with the half and half.
  • 8 add in the vanilla and mix to combine.
  • 9 pour the batter evenly over the apples; sprinkle with the remaining 2 tablespoons sugar.
  • 10 bake for about 30 minutes, or until puffed and golden brown.
  • 11 sprinkle with powdered sugar.
  • 12 serve immediately.
