Buttery Cashew Brittle

Ingredients
- 2 cups butter
- 2 cups sugar
- 2 tablespoons light corn syrup
- 2 teaspoons salt
- 1 teaspoon vanilla extract
- 2 -3 cups cashews
Recipe
- 1 combine all ingredients (except cashews) in a heavy saucepan over medium heat.
- 2 spread cashews in a single layer on a well-buttered parchment lined cookie sheet.
- 3 let mixture boil (stirring occasionally) for about 18-20 minutes, until foamy and caramel colored.
- 4 pour over cashews, chill and break into brittle.
