Buttery Cashew Brittle

Ingredients

  • 2 cups butter
  • 2 cups sugar
  • 2 tablespoons light corn syrup
  • 2 teaspoons salt
  • 1 teaspoon vanilla extract
  • 2 -3 cups cashews

Recipe

  • 1 combine all ingredients (except cashews) in a heavy saucepan over medium heat.
  • 2 spread cashews in a single layer on a well-buttered parchment lined cookie sheet.
  • 3 let mixture boil (stirring occasionally) for about 18-20 minutes, until foamy and caramel colored.
  • 4 pour over cashews, chill and break into brittle.
