Baked Caramel Corn

Ingredients
- 6 quarts popped popcorn (approx 1 c unpopped)
- 1 cup butter
- 2 cups brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
Recipe
- 1 preheat oven to 250 degrees.
- 2 pop popcorn. thoroughly coat a large roasting pan with cooking spray. add the popped popcorn to the pan and set aside.
- 3 combine the butter, brown sugar, light corn syrup, and salt in a 2 quart saucepan over medium-high heat. stir constantly until the mixture comes to a boil. remove from heat.
- 4 stir in the baking soda and vanilla (mixture will bubble and foam). pour caramel over the popcorn and stir until thoroughly coated.
- 5 bake popcorn at 250 degrees for approximately one hour, stirring every 15 minutes. the caramel corn is ready when the caramel is no longer sticky.
