Aunt Pauline's Lemon Sponge Cake

Ingredients

- 6 egg yolks
- 6 egg whites
- 1 1/2 cups sugar
- 1 1/2 cups flour
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon salt
- 3/4 teaspoon cream of tartar
Recipe
- 1 beat egg yolks until thick and lemon colored.
- 2 gradually add sugar then extracts.
- 3 fold in flour sifted with salt a little at a time.
- 4 beat egg until foamy, add cream of tartar and beat until they form moist glossy peaks.
- 5 gold into egg yolk mixture.
- 6 bake in ungreased tube pan in 325 degree oven, one hour.
