Aunt Pauline's Lemon Sponge Cake

Ingredients

  • Servings: 16
  • 6 egg yolks
  • 6 egg whites
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 3/4 teaspoon cream of tartar

Recipe

  • 1 beat egg yolks until thick and lemon colored.
  • 2 gradually add sugar then extracts.
  • 3 fold in flour sifted with salt a little at a time.
  • 4 beat egg until foamy, add cream of tartar and beat until they form moist glossy peaks.
  • 5 gold into egg yolk mixture.
  • 6 bake in ungreased tube pan in 325 degree oven, one hour.
