Apricot Balls

Ingredients
- 200 g dried apricots, chopped
- 1/2 cup orange juice
- 1/4 teaspoon citric acid
- 1/2 cup icing sugar
- 1 cup coconut
- 1 cup fine plain sweet biscuit crumbs
- 1/2 cup melted chocolate
Recipe
- 1 put apricots, orange juice and citric acid into a saucepan. cover and bring to the boil. reduce heat and simmer for 10 minutes. leave to cool.
- 2 puree apricot mixture in a food processor or blender. transfer to a bowl.
- 3 add icing sugar, coconut and biscuit crumbs. mix well.
- 4 measure tablespoons of mixture and roll into balls.
- 5 dip in melted chocolate. chill until set.
