Alex's Vegan Chocolate Chip Cookies

Ingredients
- 1 cup vegetable shortening
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/4 cup vanilla soymilk
- 1 teaspoon vanilla
- 2 1/4 cups unbleached flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 12 ounces semi-sweet chocolate chips (vegan, no milk products)
Recipe
- 1 preheat oven to 350 degrees f.
- 2 cream together shortening and sugars until light and fluffy.
- 3 blend in soy milk and vanilla.
- 4 in a seperate bowl combine dry ingredients.
- 5 add dry ingredients to creamed mixture and mix to combine.
- 6 fold in chocolate chips.
- 7 drop by rounded tablespoons onto ungreased cookie sheets.
- 8 bake at 350 degrees f for 8-10 minutes.
