Carrot Cake With Cream Cheese Frosting

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 1/4 cup oil
  • 4 eggs
  • 1 can crushed pineapple
  • 1 cup coconut
  • 2 cups grated carrots
  • 1 (8 ounce) package cream cheese
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • icing sugar

Recipe

  • 1 cake: sift flour, baking powder, baking soda, and salt.
  • 2 add other ingredients up to and including the eggs and mix.
  • 3 blend in grated carrots, well drained pineapple and coconut.
  • 4 bake in 9x13 pan at 350f for 35-45 minutes.
  • 5 frosting: cream together first three ingredients, and add icing sugar as needed to reach desired consistency.
  • 6 spread on cake when cooled.
