Carrot Cake With Cream Cheese Frosting

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups sugar
- 1/4 cup oil
- 4 eggs
- 1 can crushed pineapple
- 1 cup coconut
- 2 cups grated carrots
- 1 (8 ounce) package cream cheese
- 1/2 cup butter
- 1 teaspoon vanilla
- icing sugar
Recipe
- 1 cake: sift flour, baking powder, baking soda, and salt.
- 2 add other ingredients up to and including the eggs and mix.
- 3 blend in grated carrots, well drained pineapple and coconut.
- 4 bake in 9x13 pan at 350f for 35-45 minutes.
- 5 frosting: cream together first three ingredients, and add icing sugar as needed to reach desired consistency.
- 6 spread on cake when cooled.
