Butterscotch Sugar Drops

Ingredients
- 1 cup butter or 1 cup margarine, softened
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 10 ounces hershey's butterscotch chips
- 1 1/4 cups chopped dried apricots
Recipe
- 1 heat oven to 350°f
- 2 beat butter and sugar in large bowl until well blended. add eggs and vanilla; beat well. stir together flour, baking soda and salt; gradually add to butter mixture, beating until well blended. stir in butterscotch chips and apricots. drop by teaspoons onto ungreased cookie sheet.
- 3 bake 8 to 10 minutes or until lightly browned around edges. cool slightly; remove from cookie sheet to wire rack. cool completely.
