Candi's Apple Cake

Ingredients
- 4 apples, peeled and diced
- 2 cups sugar
- 3 cups flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 2 eggs, well beaten
Recipe
- 1 mix apples and sugar. let stand for 1 hour. stir often so that mixture makes its own juice.
- 2 add dry ingredients, then oil, then vanilla and eggs. do not use a mixer.
- 3 pour into a well greased and floured tube pan (or any pan); bake for 1 hour and 15 minutes at 350*. frost with cream cheese frosting or thin glaze.
- 4 in hot, humid weather, keep this cake in the fridge to prevent mold.
