Candi's Apple Cake

Total Time: 2 hrs 45 mins Preparation Time: 1 hr 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • 4 apples, peeled and diced
  • 2 cups sugar
  • 3 cups flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs, well beaten

Recipe

  • 1 mix apples and sugar. let stand for 1 hour. stir often so that mixture makes its own juice.
  • 2 add dry ingredients, then oil, then vanilla and eggs. do not use a mixer.
  • 3 pour into a well greased and floured tube pan (or any pan); bake for 1 hour and 15 minutes at 350*. frost with cream cheese frosting or thin glaze.
  • 4 in hot, humid weather, keep this cake in the fridge to prevent mold.
