Blow The Doors Off Bourbon Cake

Total Time: 1 hr 55 mins Preparation Time: 25 mins Cook Time: 1 hr 30 mins

Ingredients

  • 1 lb butter
  • 3 cups granulated sugar
  • 8 large eggs, whites & yolks separated
  • 3 cups self raising flour
  • 2 teaspoons vanilla essence
  • 2 teaspoons almond essence
  • 3/8 cup bourbon (more is a bit too strong for me)
  • 1/2 cup slivered almonds (optional)

Recipe

  • 1 cream the butter and 2 cups sugar until fluffy.
  • 2 add the yolks, singly, beating each time, and add the flour alternatively with the flavouring and bourbon, beating till smooth.
  • 3 beat the whites stiff and add the rest of the sugar. gently fold the yolk mixture into the egg whites.
  • 4 put the nuts on the bottom of a buttered 10" tube pan and turn the mixture into it, smoothing over.
  • 5 bake at 350 for 1 1/2 hours & let cool before turning over & cutting.
