Carrot Cake From Crocodile Cafe

Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cinnamon
  • 5 eggs
  • 3 cups sugar
  • 2 cups oil
  • 2 teaspoons good vanilla
  • 6 cups finely shredded carrots
  • 2 cups crushed pineapple, drained
  • 2 cups chopped walnuts
  • 1 lb cream cheese
  • 1/2 cup butter
  • 5 cups powdered sugar
  • 1 teaspoon vanilla

Recipe

  • 1 sift together flour, baking powder, soda, salt, and cinnamon. set aside.
  • 2 beat eggs, and then add sugar, oil and vanilla. beat until fluffy.
  • 3 stir in four mixture, carrots, pineapple, and nuts.
  • 4 bake in three 9-inch prepared cake pans for 45 minutes at 325 degrees. cool on wire racks. frost when cold.
  • 5 frosting.
  • 6 cream butter and cream cheese -- add sugar and vanilla beating until smooth.
