Ingredients

- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cinnamon
- 5 eggs
- 3 cups sugar
- 2 cups oil
- 2 teaspoons good vanilla
- 6 cups finely shredded carrots
- 2 cups crushed pineapple, drained
- 2 cups chopped walnuts
- 1 lb cream cheese
- 1/2 cup butter
- 5 cups powdered sugar
- 1 teaspoon vanilla
Recipe
- 1 sift together flour, baking powder, soda, salt, and cinnamon. set aside.
- 2 beat eggs, and then add sugar, oil and vanilla. beat until fluffy.
- 3 stir in four mixture, carrots, pineapple, and nuts.
- 4 bake in three 9-inch prepared cake pans for 45 minutes at 325 degrees. cool on wire racks. frost when cold.
- 5 frosting.
- 6 cream butter and cream cheese -- add sugar and vanilla beating until smooth.
