Cajun Fig Cobbler

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 1/4 cup butter (margarine works too)
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 22 ounces fig preserves

Recipe

  • 1 place butter in a 2 quart baking dish. bake at 375* until butter melts. remove from oven, and set aside.
  • 2 combine flour, sugar, and baking powder in a large bowl. add milk, egg, and vanilla, stirring until smooth. pour batter into baking dish; spoon preserves over batter.
  • 3 bake at 375* for 40 min., covering dish with aluminum foil after 20 minute serve warm with vanilla ice cream or whipped cream.
