Butterscotch Refrigerator Cookies

Ingredients

  • 1 cup butterscotch chips
  • 2 3/4 cups all-purpose flour
  • 1 cup land o lakes butter, softened*
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped pecans

Recipe

  • 1 melt butterscotch chips in 1-quart saucepan over low heat, stirring constantly, until melted (3 to 5 minutes).
  • 2 place butterscotch mixture in large bowl; add all remaining ingredients except pecans. beat at low speed, scraping bowl often, until well mixed. stir in pecans by hand.
  • 3 divide dough in half. shape each half into 8x1 1/2-inch roll. wrap in plastic food wrap. refrigerate until firm (at least 2 hours).
  • 4 heat oven to 400°f cut rolls into 1/4-inch slices with sharp knife. place 1-inch apart onto ungreased cookie sheets. bake for 5 to 7 minutes or until set. cool 1 minute; remove from cookie sheets.
