A Very Different Pumpkin Cake

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 125 g soft butter
  • 200 g caster sugar
  • 185 g self raising flour
  • 2 tablespoons cornflour or 2 tablespoons rice flour
  • 1 cup mashed pumpkin, pack cup well
  • 1 cup coconut milk, i use light

Recipe

  • 1 heat oven to 180 c.
  • 2 cream butter and sugar in bowl till fluffy.
  • 3 add mashed pumpkin, stir well.
  • 4 add sifted flours, stir well.
  • 5 fold in coconut milk.
  • 6 pour into greased 20 cm cake tin.
  • 7 cook 60 minutes till set - may need longer.
  • 8 slices better on second day !
