Carrot Cake With Cream Cheese Frosting

Ingredients

  • Servings: 12
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 1/4 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups shredded coconut
  • 1 cup shredded carrot (or more)
  • 1 (8 ounce) can crushed pineapple (drained)
  • 1 cup chopped walnuts (optional)
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 2 teaspoons vanilla
  • 3 -4 cups powdered sugar

Recipe

  • 1 for the cake:.
  • 2 mix sugar, oil, eggs and vanilla.
  • 3 mix dry ingredients separately.
  • 4 mix shredded ingredients- then mix everything together.
  • 5 bake in greased and floured 9 x 13 pan at 350 degrees for 50 minutes.

  • 8 mix cream cheese, butter, vanilla and powdered sugar then spread.
