Ingredients

- 2 cups sugar
- 1/2 cup vegetable oil
- 3 eggs
- 2 teaspoons vanilla
- 2 1/4 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups shredded coconut
- 1 cup shredded carrot (or more)
- 1 (8 ounce) can crushed pineapple (drained)
- 1 cup chopped walnuts (optional)
- 8 ounces cream cheese
- 1/2 cup butter
- 2 teaspoons vanilla
- 3 -4 cups powdered sugar
Recipe
- 1 for the cake:.
- 2 mix sugar, oil, eggs and vanilla.
- 3 mix dry ingredients separately.
- 4 mix shredded ingredients- then mix everything together.
- 5 bake in greased and floured 9 x 13 pan at 350 degrees for 50 minutes.
- 6 let cool in pan approximately 5 minutes.

- 8 mix cream cheese, butter, vanilla and powdered sugar then spread.
