Carrot Cake Muffin Treats

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1/3 cup nonfat milk
  • 1 (8 ounce) can unsweetened crushed canned pineapple
  • 1 1/2 cups carrots, grated

Recipe

  • 1 combine the dry ingredients in a bowl.
  • 2 add the remaining ingredients and stir to blend.
  • 3 spoon into oiled muffin tins or paper muffin cups.
  • 4 bake at 350°f for 20 to 25 minutes.
