Cajun Gingerbread

Ingredients

  • Servings: 12
  • 2 eggs
  • 3/4 cup dark brown sugar, packed
  • 3/4 cup light molasses
  • 3/4 cup butter, melted
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup boiling water
  • 1 cup pecans, chopped

Recipe

  • 1 beat eggs, brown sugar, molasses and melted butter together.
  • 2 mix together dry ingredients and add with the boiling water to first mixture.
  • 3 beat well, then pour into a well greased 13x9x2 inch baking pan.
  • 4 bake in preheated oven at 350f for 35 minutes.
