Banana Cookies!

Ingredients
- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 1 egg, room temperature
- 1 cup mashed banana
- 1 teaspoon baking soda
- 2 cups flour
- 1 pinch salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground mace or 1/2 teaspoon nutmeg
- 1/2 teaspoon ground cloves
Recipe
- 1 preheat the oven to 350°f
- 2 cream the butter and sugar until light and fluffy. add the egg and continue to beat until well mixed.
- 3 mix the mashed bananas and baking soda in a bowl and let sit for 2 minutes to froth a bit, this will give the cookies their rise.
- 4 mix the banana mixture into the butter mixture.
- 5 combine the flour, salt, and spices and mix into the butter and banana mixture until just combined.
- 6 drop into dollops onto a parchment paper lined baking sheet.
- 7 bake for 11-13 minutes or until nicely golden brown.
- 8 let cool on wire racks.
