Banana Citrus Cake With Orange Syrup

Ingredients
- 185 g butter
- 1 cup caster sugar
- 4 eggs
- 2 cups self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 3 medium bananas
- 2 tablespoons lemon juice
- 1/4 cup orange juice
- 1/2 cup sugar
- 1/4 cup water
- 1/4 cup strained orange juice
Recipe
- 1 cream butter and sugar in small bowl with electric mixer until light anf fluffy.
- 2 add eggs one at a time, beating well after each addition.
- 3 process or blend bananas, lemon and orange juices until smooth and liquified.
- 4 stir sifted flour and soda and banana mixture into creamed mixture.
- 5 pour into well greased lightly floured loaf tin.
- 6 bake in moderate oven for about 40 minutes.
- 7 stand for 5 minutes.
- 8 invert tin onto a wire rack, stand for a further 10 minutes before removing from the tin.
- 9 for the syrup, combine sugar, water and orange juice in a pan, bring to the boil and pour it onto the cake whilst hot.
