Butter Tarts

Ingredients

- 1/2 cup raisins
- 1 cup boiling water
- 24 prepared tart shells
- 1/4 cup butter
- 1/2 cup light brown sugar
- 1 cup corn syrup
- 2 eggs (slightly beaten)
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Recipe
- 1 preheat oven to 375°f.
- 2 pour boiling water over raisins to cover them.
- 3 let raisins stand until plumped, then drain and dry with paper towel.
- 4 arrange in tart shells.
- 5 in a medium saucepan stir butter and sugar together.
- 6 add the corn syrup, eggs, salt, and vanilla.
- 7 combine over low heat until just blended.
- 8 spoon mixture into unbaked tart shells, filling each about 2/3 full.
- 9 bake for 15-18 minutes. do not allow filling to boil over.
- 10 remove onto cooling racks immediately.
