Butter Tarts

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 24
  • 1/2 cup raisins
  • 1 cup boiling water
  • 24 prepared tart shells
  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 1 cup corn syrup
  • 2 eggs (slightly beaten)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Recipe

  • 1 preheat oven to 375°f.
  • 2 pour boiling water over raisins to cover them.
  • 3 let raisins stand until plumped, then drain and dry with paper towel.
  • 4 arrange in tart shells.
  • 5 in a medium saucepan stir butter and sugar together.
  • 6 add the corn syrup, eggs, salt, and vanilla.
  • 7 combine over low heat until just blended.
  • 8 spoon mixture into unbaked tart shells, filling each about 2/3 full.
  • 9 bake for 15-18 minutes. do not allow filling to boil over.
  • 10 remove onto cooling racks immediately.
