Autumn Cheesecake

Ingredients

- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 1/2 teaspoon cinnamon
- 1/4 cup margarine, melted
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1/2 teaspoon vanilla
- 4 cups apples, peeled, thinly sliced
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 cup pecans, chopped
Recipe
- 1 combine crumbs, sugar, cinnamon and margarine, press onto bottom of 9-inch springform pan.
- 2 bake at 350 degrees f., 10 minutes.
- 3 combine cream cheese and sugar, mixing at medium speed on electric mixer, until well blended.
- 4 add eggs, one at a time, mixing well after each addition.
- 5 blend in vanilla, pour over crust.
- 6 toss apples with combined sugar and cinnamon.
- 7 spoon apple mixture over cream cheese layer; sprinkle with pecans.
- 8 bake at 350 degrees f., 1 hour and 10 minutes.
- 9 loosen cake from rim of pan; cool before removing rim of pan.
- 10 chill.
- 11 variation:
- 12 add 1/2 cup finely chopped pecans with crumbs for crust.
- 13 continue as directed.
