Autumn Cheesecake

Ingredients

  • Servings: 10
  • 1 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup margarine, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla
  • 4 cups apples, peeled, thinly sliced
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup pecans, chopped

Recipe

  • 1 combine crumbs, sugar, cinnamon and margarine, press onto bottom of 9-inch springform pan.
  • 2 bake at 350 degrees f., 10 minutes.
  • 3 combine cream cheese and sugar, mixing at medium speed on electric mixer, until well blended.
  • 4 add eggs, one at a time, mixing well after each addition.
  • 5 blend in vanilla, pour over crust.
  • 6 toss apples with combined sugar and cinnamon.
  • 7 spoon apple mixture over cream cheese layer; sprinkle with pecans.
  • 8 bake at 350 degrees f., 1 hour and 10 minutes.
  • 9 loosen cake from rim of pan; cool before removing rim of pan.
  • 10 chill.
  • 11 variation:
  • 12 add 1/2 cup finely chopped pecans with crumbs for crust.
  • 13 continue as directed.
