Autumn Cheesecake With Apples

Ingredients

- 1 cup graham cracker crumbs
- 1/2 cup finely chopped pecans
- 3 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup butter or 1/4 cup margarine, melted
- 2 (8 ounce) packages philadelphia cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 2 eggs
- 1/3 cup sugar
- 1/2 teaspoon ground cinnamon
- 3 -4 cups apples, thinly peeled & sliced
- 1/4 cup chopped pecans
Recipe
- 1 preheat oven to 325°f.
- 2 crust: mix crumbs, 1/2 cup pecans, 3 tbls sugar, 1/2 tsp cinnamon & butter.
- 3 press onto bottom of a 9 inch springform pan.
- 4 bake @ 325 f for 10 minutes.
- 5 filling: beat cream cheese, 1/2 cup sugar & vanilla with electric mixer on medium speed until well blended.
- 6 add eggs, one at a time, mixing on low speed after each addition, just until blended.
- 7 pour over crust.
- 8 topping: mix 1/3 cup sugar & 1/2 tsp cinnamon; toss with apples.
- 9 spoon apple mixture over cream cheese layer.
- 10 sprinkle with 1/4 cup pecans.
- 11 bake @ 325 for 1 hour & 10 min to 1 hour & 15 min or until center is almost set. run knife or metal spatula around rim of pan to loosen cake. cool before removing rim of pan.
- 12 refrigerate 4 hours or overnight.
