Apple Streusel Slice

Ingredients

  • Servings: 8
  • 180 g butter, softened
  • 3/4 cup caster sugar
  • 2 eggs, lightly beaten
  • 1 1/2 cups plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 large granny smith apple, peeled and cored
  • 1/4 cup brown sugar
  • 1/4 cup plain flour
  • 1 teaspoon ground cinnamon
  • 30 g butter, softened

Recipe

  • 1 preheat oven to 180 degrees celcius.
  • 2 grease and line a 3x18x28cm slab pan with baking paper.
  • 3 using an electric mixer, cream butter and caster sugar until pale and creamy.
  • 4 mix in the egg in two batches.
  • 5 sift flour, baking powder, and cinnamon over the butter mixture. fold through with a large metal spoon.
  • 6 spread the mixture evenly in the pan. top with diced apple.
  • 7 make the streusel topping: combine brown sugar, flour and cinnamon in a bowl. rub in the butter using your fingers until clumps form. crumble the topping over the slice.
  • 8 bake for 45-50 minutes until golden and an inserted skewer comes out clean.
  • 9 cool in pan, then cut into squares to serve. would go well with vanilla ice-cream.
