Apple Streusel Slice

Ingredients

- 180 g butter, softened
- 3/4 cup caster sugar
- 2 eggs, lightly beaten
- 1 1/2 cups plain flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 large granny smith apple, peeled and cored
- 1/4 cup brown sugar
- 1/4 cup plain flour
- 1 teaspoon ground cinnamon
- 30 g butter, softened
Recipe
- 1 preheat oven to 180 degrees celcius.
- 2 grease and line a 3x18x28cm slab pan with baking paper.
- 3 using an electric mixer, cream butter and caster sugar until pale and creamy.
- 4 mix in the egg in two batches.
- 5 sift flour, baking powder, and cinnamon over the butter mixture. fold through with a large metal spoon.
- 6 spread the mixture evenly in the pan. top with diced apple.
- 7 make the streusel topping: combine brown sugar, flour and cinnamon in a bowl. rub in the butter using your fingers until clumps form. crumble the topping over the slice.
- 8 bake for 45-50 minutes until golden and an inserted skewer comes out clean.
- 9 cool in pan, then cut into squares to serve. would go well with vanilla ice-cream.
