Butter Tarts

Ingredients

  • 24 frozen tart shells
  • 1 (300 ml) can eagle brand sweetened condensed milk (regular or fat-free)
  • 1/2 cup brown sugar, packed
  • 1/3 cup corn syrup
  • 2 tablespoons butter, melted
  • 1 egg, well beaten
  • 1 pinch cinnamon (optional)
  • 2/3 cup golden raisin

Recipe

  • 1 remove tart shells from freezer and arrange on 2 baking sheets. let thaw 10 minutes.
  • 2 meanwhile, whisk together sweetened condensed milk, brown sugar, corn syrup, butter, egg and cinnamon. stir in raisins. pour evenly into tart shells.
  • 3 bake in preheated oven (375f) for 18 minutes or until center is just set and pastry is golden. cool on wire rack. serve warm or at room temperature.
  • 4 for plump soft textured raisins pour a little boiling water over raisins. let stand 3-4 minutes. drain and pat dry.
