Butter Rum Glazed Applesauce Cake

Ingredients

  • Servings: 9
  • 1/3 cup butter
  • 3/4 cup sugar
  • 1 cup applesauce
  • 1 apple, cored, peeled and chopped
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1 cup powdered sugar
  • 1/2 teaspoon rum extract
  • 3 -4 teaspoons half-and-half

Recipe

  • 1 melt butter in a saucepan over medium heat. cook and stir for 2 to 2 1/2 minutes until butter begins to brown. immediately remove from heat and stir in sugar, applesauce, apple and vanilla. set aside.
  • 2 combine remaining ingredients in a large bowl and stir in applesauce mixture. pour into a greased 8x8 baking dish.
  • 3 bake at 350ºfor 25 minutes or until a toothpick inserted in center comes out clean.
  • 4 pour warm rum glaze over hot cake. let cake cool for 30 minutes and serve warm.
  • 5 glaze: melt butter in a saucepan over medium heat. cook and stir for 2 to 2 1/2 minutes until butter begins to brown. immediately remove from heat and stir in remaining ingredients until spreadable and smooth.
