Butter Rum Glazed Applesauce Cake

Ingredients

- 1/3 cup butter
- 3/4 cup sugar
- 1 cup applesauce
- 1 apple, cored, peeled and chopped
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1 cup powdered sugar
- 1/2 teaspoon rum extract
- 3 -4 teaspoons half-and-half
Recipe
- 1 melt butter in a saucepan over medium heat. cook and stir for 2 to 2 1/2 minutes until butter begins to brown. immediately remove from heat and stir in sugar, applesauce, apple and vanilla. set aside.
- 2 combine remaining ingredients in a large bowl and stir in applesauce mixture. pour into a greased 8x8 baking dish.
- 3 bake at 350ºfor 25 minutes or until a toothpick inserted in center comes out clean.
- 4 pour warm rum glaze over hot cake. let cake cool for 30 minutes and serve warm.
- 5 glaze: melt butter in a saucepan over medium heat. cook and stir for 2 to 2 1/2 minutes until butter begins to brown. immediately remove from heat and stir in remaining ingredients until spreadable and smooth.
