Apricot Waffles

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 40 g dried apricots
  • 75 g butter, at room temperature
  • 2 eggs
  • 2 tablespoons sugar
  • 100 g flour
  • 1 teaspoon baking powder
  • 100 ml heavy cream

Recipe

  • 1 soak the dried apricots in warm water for 15 minutes, then drain and pat dry.
  • 2 cut in small pieces.
  • 3 beat or whisk the butter, sugar and eggs together.
  • 4 sift the flour and the baking powder together.
  • 5 add the flour,the cream and the apricot pieces to the butter mixture.
  • 6 stir till everything is well incorporated.
  • 7 bake in an oiled waffle iron according to manufacturer's directions.
  • 8 serve warm!
