Caramelized Fruit And Nut Clusters

Ingredients
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1 tablespoon light corn syrup
- 1 tablespoon butter or 1 tablespoon margarine
- 1/2 cup walnut halves
- 1/2 pecan halves
- 1/4 cup whole blanched almond, toasted
- 1/4 cup dried cherries (or cranberries)
- 1/4 cup dried apricot, chopped small
Recipe
- 1 combine sugars, milk, and corn syrup. cook and stir over medium heat till sugars dissolve and mixture boils. continue cooking to soft ball stage (236 degrees f).
- 2 add butter or margarine and tablespoon vanilla. let cool 10 minutes.
- 3 beat just till mixture begins to lose its gloss, 3 to minutes.
- 4 quickly stir in nuts and fruits till coated. drop immediately from spoons onto buttered baking sheet.
