Caramelized Fruit And Nut Clusters

Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1 tablespoon light corn syrup
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/2 cup walnut halves
  • 1/2 pecan halves
  • 1/4 cup whole blanched almond, toasted
  • 1/4 cup dried cherries (or cranberries)
  • 1/4 cup dried apricot, chopped small

Recipe

  • 1 combine sugars, milk, and corn syrup. cook and stir over medium heat till sugars dissolve and mixture boils. continue cooking to soft ball stage (236 degrees f).
  • 2 add butter or margarine and tablespoon vanilla. let cool 10 minutes.
  • 3 beat just till mixture begins to lose its gloss, 3 to minutes.
  • 4 quickly stir in nuts and fruits till coated. drop immediately from spoons onto buttered baking sheet.
