Caramel Chocolate Delices

Ingredients

  • 2 1/2 ounces bittersweet chocolate, chopped
  • 3 large egg whites, at room temperature
  • 1 1/2 cups brown sugar
  • 1 cup finely ground unblanched almonds
  • 1 teaspoon grated lemon, zest of

Recipe

  • 1 preheat the oven to 325 degrees f.
  • 2 line two large baking sheets with parchment paper.
  • 3 melt the chocolate, stirring until smooth.
  • 4 let cool.
  • 5 beat the eggwhites on high speed until they hold soft peaks.
  • 6 gradually add the sugar and beat until the meringues hold stiff peaks and is glossy.
  • 7 gently fold in the melted chocolate with a rubber spatula.
