Butterscotch Pie

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 cup light brown sugar
  • 1 1/2 cups milk
  • 5 tablespoons cake-and-pastry flour
  • 1 pinch salt
  • 2 egg yolks
  • 1 tablespoon butter
  • 1 9 in.baked pastry shell
  • 2 egg whites
  • 6 teaspoons sugar

Recipe

  • 1 preheat oven to 350f.
  • 2 in medium saucepan mix the brown sugar, flour and salt.
  • 3 over medium heat, gradually add the milk and mix well.
  • 4 beat egg yolks and add to the mixture.
  • 5 cook, stirring constantly, until thick.
  • 6 add butter and mix until melted.
  • 7 remove mixture from heat.
  • 8 whip egg whites and sugar until medium peaks form.
  • 9 pour mixture into baked pie shell.
  • 10 swirl meringue onto top of pie.
  • 11 bake approximately 10 minutes until tips of meringue are light brown.
  • 12 cool completely on pie rack.
  • 13 wrap loosely with plastic wrap, and store in refridgerator over night.
