Buttercream Torte

Ingredients

  • Servings: 9
  • 2 cups vanilla wafers, crushed
  • 1 cup butter
  • 2 cups powdered sugar
  • 1/2 cup maraschino cherry, chopped
  • 1/2 teaspoon vanilla
  • 4 eggs
  • 1 cup whipping cream

Recipe

  • 1 lightly grease a 9x9" square pan.
  • 2 spread 1 cup of the crushed vanilla wafers in pan.
  • 3 in a bowl, cream butter until very light and fluffy. add eggs one at a time, beating well after each. add vanilla. slight separation is normal. spread this over vanilla wafers.
  • 4 sprinkle 3/4 c of the remaining wafers over the top of this layer.
  • 5 in another bowl, beat whipping cream until thick. fold in cherries. spread this as the next layer.
  • 6 sprinkle remaining wafers over the top. cut into portions while still in the pan with a knife dipped in water. garnish each piece with a cherry half.
  • 7 refrigerate at least 4 hours or freeze.
