Black Sapote Ice Cream

Total Time: 10 hrs 10 mins Preparation Time: 10 mins Cook Time: 10 hrs

Ingredients

  • 1 cup black sapote, pulp
  • 1 dash salt
  • 2 tablespoons cold water
  • 600 ml cream, beaten stiff
  • 3/4 cup sugar
  • 1 teaspoon agar or 1 teaspoon gelatin
  • 3 tablespoons boiling water

Recipe

  • 1 soak gelatin/agar in cold water.
  • 2 mash pulp until its smooth.
  • 3 add sugar and mix well.
  • 4 add agar or gelatin which has been dissolved in hot water.
  • 5 chill until thickened.
  • 6 beat until light.
  • 7 fold in the whipped cream using a wire whisk.
  • 8 pour into a refrigerator tray and freeze.
  • 9 for vegetarian do not use regular gelatin use the agar-agar.
